Let's get something clear, this is not the regular type of Niçoise, rather is my type of Niçoise salad, puff, good now that is out of the way, let me elaborate.
Usually a Niçoise salad has: boiled potatoes, blanched green beans, boiled eggs, shallots, tomatoes, lettuce, radishes, olives and tuna. Dressed with a mixture of: vinegar, shallots, mustard, thyme and olive oil.
My version has: steamed cauliflower, blanched green beans, poached eggs, cooked white beans, cherry tomatoes, lettuce, radishes, kalamata olives, tuna and a ripe avocado. Dressed with a simple dressing of olive oil, lemon, salt and pepper.
As I always say, nothing is set in stone. so play with your food and the recipes. All the things on this plate are things I love eating, even when I'm not laying off the carbs, so it makes me happy to enjoy them on a salad.
