If we are going to talk about healthy and nutritious this has to be the go to recipe. Eating right does not mean it has to taste boring, on the contrary, this recipe hits all the right spots.
It is so good, that it almost feels like cheating but it super light.
This recipe yields 2 portions
2 cups of cooked couscous (chilled)
2 chicken breast (cooked & chopped)
1 cup of yellow bell pepper (chopped)
1 cup of green beans (roasted & chopped)
1/2 cup of raisins (soaked in warm water)
1/2 cup of roasted walnuts
1 tablespoon of olive oil
1 tablespoon of lemon (juiced)
Salt and Pepper to taste
1. Mix all ingredients together and keep it in the fridge until serving time.
1. To have it as a side dish, just avoid the meat.
2. If you are limiting the carbohydrates intake, substitute with quinoa, it is just as good.
