Shish-Barak (Home Made Arabic dumplings)

Shish-Barak Dumplings. Think of ravioli, but then Arabic, stuffed with ground lamb meat. This is typically eaten in a yogurt sauce.


It seems like a lot of work but honestly it is not. I usually seat in front of the TV with the circles and the filling and I just do them while watching TV, really relaxed.


A funny story about this recipe, my grandfather refused to eat it because once someone made the comparison that the dumplings looked like people’s ears and he was forever hunted by it.


This recipe yields 4 servings.




1 cup of AP flour


½ cup of water


1 teaspoon of salt





1. Mix all ingredients together until a homogenous ball is formed. Let rest for 10 minutes.


2. Divide the dough into 40 small balls and the work flat circles with your hands, or you could extend the dough on a flat surface with a roller and cut small circles.


3. Fill the circle with the lamb, close it into a half moon shape and the plug together the two corners of the half moon. It will look like an ear. 


4. Bake for 15 minutes or slightly golden. Reserve for the soup or freeze.
